Didn't think Wilbur had an infinite resistance to stuns, so Plague Doctor became a dead weight quickly.

Leper is alright. Houndmaster would have been better than a Man at Arms. An Arbalest/Sharpshooter instead of the Plague Doctor with its mark clearing trivializes the fight, especially with the Occultist's Weakening Curse.

The Occultist has a class specific trinket that gives him +40% debuff chance. A lot of the debuffs have a bit of a low chance to work, and bosses have a decent amount of debuff resist so you need debuff trinkets if you are planning on having any of them land.

Even if that fails the Arbalest can help with her rallying flare to make sure your guys don't get obliterated.

a LOT of game have some elements of luck. It's much easier to find a game with luck than without luck. RNG is part of most games. Darkest dungeon RNG is very soft comepared to a lot of games. If you think the darkest dungeon RNG is bad, try poker and come back to darkest dungeon after getting shit on for hundreds of $ for 4 weeks non-stop, you'll laugh at yourself back then

Shrieker is purposefully unfair because it's not really a boss. It's not really meant to be killed. I beat the game and never killed it in about 10 fights. There's more to the encounter than just killing it.

I've seen a guy beat the game torchless, on Stygian, and banned the usage of stuns. Sometimes you get unlucky, but you can bounce back from it a lot.

Depends on the party and their levels. Most classes will have 80% Bleed resist at max level, so the chance of a rank 5 Wyrd Reconstruction bleeding them is only 5%

Well it is worth it since it's basically free money, but sure. If you want to kill it then there are strats to help with that (never tried them). Obviously it'll always come down to RNG though, that's just the nature of the game. Best you can do is maximise your odds.
