Roughly 1 month after playing through any given Resident Evil game I forget the plot entirely. My favourite is 3. I'd imagine I've finished that around 5 times. My best idea of the plot is:

Umbrella is naughty. They made Nemesis to kill STARS members because (???) they're the only highly trained members of the forced (perhaps), America fights back and nukes Raccoon City.

Police are sent in to investigate murders in a forest. They get attacked by zombie dogs so they-re forced to into a nearby mansion since their helicopter left them stranded. They investigate said mansion and uncover various monsters, as they investigate furthermore they reveal it is all because of a deadly virus that enhances lifeforms and mutates them. Investigating even deeper they also reveal that it is all a ploy on the multinational pharmaceutical enterprise Umbrella, who uses his pharmacy front to fund biological weapons. The team also gets betrayed by one of their own, who was double/crossing them since the beginning. In the end they battle against the actual prototype of a bio organic weapon Umbrella has been working on, they set the autodestruct countdown for the lab and mansion and they barely manage to escape when they helicopter comes back to rescue them.

So, three to four Nazis leave Germany and after a few years, they create a pharmaceutical company named Umbrella, that uses the Iron Cross design on a white background.
Years later, one of them decides to create cloned children, resulting in Project-W or the Wesker Children Program, which only has two successful clones- Alex and Albert Wesker.
The two clones work for Umbrella, with Albert becoming a lead researcher and direct coworker of the creator of the T and G-Virus, William Birkin, while also remaining under the guise as STARS Commander.
Once Birkin's new bioweapon, the Tyrant, is completed, Albert lures his Bravo team there and makes sure their plane crashes so the Alpha Team will have to go in an investigate, leading them to the mansion. The Bravo Team's helicopter crashes, leaving only one survivor by the end, Rebecca Chambers, who finds a criminal named Billy Coen, and they stop an opera-singing leech man from killing everything, and they split up, with Rebecca going to the mansion that Alpha Team would be lured to in a few hours.
Later, Alpha Team arrives and are attacke dby dogs and seperated. Some shenangins go down that are all, technically speaking, non-canon and no matter what you do, either Barry or Rebecca will be left out, but by the end, they find out Wesker has been workign for Umbrella and lured them to the mansion to get the necessary battle data from the Tyrant, but the Tyrant stabs him and chases off after the remaining members of STARS. Wesker had one of Birkin's G-Virus samples on him, and it melded with his DNA, making him a superhuman, and he escapes the mansion to form his own rival company to Umbrella, as he was planning to do that after collecting the battle data.
After Jill, Barry, Brad, Rebecca and Chris escape, Rebecca and Chris immediately ditch town after the police chief disbands STARS, as he was being paid off by Umbrella at the time

Jill, Barry and Brad remain in the city though, as are present to see its fall in September, when Birkin's G-Virus samples leak into the sewers, where rats carry the virus. The reason this happened was because Birkin tried to use the sample to heal himself after having his virus stolen by two Umbrella operatives, one being HUNK. While the one who shot him dies, HUNK escapes just a few hours later, carrying a G-Virus sample.
Meanwhile, the virus spreads throughout the city, so Jill tries to escape, and she runs into Brad twice on her way to the police station, and Brad is killed by Nemesis in their second meeting, an upgraded version of Tyrant. Nemesis and Jill have a few run-ins throughout the city, and Jill eventually runs into more Umbrella Operatives, who are just Mercs Umbrella hired to save face by having them rescue citizens. Jill, Carlos and Nicholai escape the main section of the city, but Nemesis follows Jill and Carlos to the clocktower, where he infects Jill before being chased away by Carlos. Afterwards, Carlos runs out into the other half of the city to procure a medicine to save Jill.
Inbetween Jill's infection and her revival, some stuff goes down involving a few survivors, some of which manage to escape the city. At the same time as that, Leon arrives late on his first day working as a police officer for the RPD, only to discover the city is infested with zombies, but he finds a woman named Claire Redfield, who he effectively cucks for an Asian Umbrella spy named Ada Wong. A lot of shit goes down involving a little girl named Sherry, as she is the daughter of William Birkin and carries the last sample of the G-Virus, which Ada steals and escapes on the helicopter with HUNK, while Leon, Claire and Sherry leave the lab under the police station using an emergency rail system, as the police station, along with another version of the Tyrant, Mr X, and G-Birkin die in the resulting explosion of the police station, thanks to the lab's [cont]

After all that, Jill wakes up and later on discovers that Nicholai is actually going to kill Jill, as she is a surviving member of STARS and could harm the future of Umbrella. Nicholai fails in killer her though, and RE3 climaxes with Jill taking down a mutated Nemesis, and escaping with Carlos on Barry's helicopter.
Then some shit goes down with a guy named Ark Thomphson, two fuckers on a boat fight a Tyrant, Leon gets body-snatched, and the fake Leon later goes on to get cucked by Ada. Claire gets a jailbait bf who dies, and Chris rockets Wesker's head off.
