Its because in DnD lore positive energy also represents an abundance or refinement of something and negative an absence or destruction of it. What is the absence of water? No water but that doesn't really work so they picked salt since salt dries things out and repels water. As for mineral think of it as a refinement of earth. Earth is just the chunky stuff you find in the back yard. Dirt. An abundance of it is just more dirt so they went with refinement. The ores that you can pull out to make useful tools.
