Basically what you said with Paper Mario. It'd be nice to see a new Paper Mario RPG with the old mechanics built upon with new ideas, plot & characters.

Otherwise I would really like a new Kirby Air Ride on the Switch, it'd be really nice to play online & portably, although Air Ride is not a series I guess. Make a new Wario Land also.

I'm playing Super Mystery Dungeon at the moment, I liked the old ones but this is getting kinda dull. I'm about 4 bosses in and it's just not doing it for me, haven't even got other party members yet. Starting to think I just preferred sprites over 3d models, same with mainline. Thinking of just going back and finishing that 5th floor on the Cosmic Egg on SMT:IV Apocalypse.
