To be honest, SF and fighting games in general are quite easy games. The learning curve is just heavily geared towards the beginning, which makes them seem hard.

A fighting game player who has played 100 hours of game X will be much closer to the average skill level than a MOBA player with 100 hours.

I'm going to have to disagree with you here. Take Dota 2 for instance - most players will have around 2-6k hours played in the 3000 rating brackets, which is "average". SFV might be a bad comparison because of the stripped mechanics compared to previous installments, but most players in the Gold brackets only have around 200-400 hours played.
Any coop multiplayer game is not welcomed here, so
