To be honest I don't find most of the companions that interesting which is probably because there are just so many of them. Finding out about Gar's backstory and discussing tea was pretty funny. Torian Kel was one of the more interesting companions. I can't really pick a favorite. One dialogue I enjoyed in particular was with Lukan the Witless who was blocking the bridge in Shrouded Hills.
