All this recent talk about the new Monster Hunter made me remember that I still need to play it. It's been on my backlog for so fucking long now.
I bought Freedom Unite years ago on PSN for my Vita but never played it longer than 5 minutes after Character creation.
Where do I start? What should I know?

Freedom Unite is actually a pretty decent place to start, but a lot of quality-of-life stuff was improved for 3U and 4U. So if you want a smoother experience get those.
Otherwise, just play missions as they come. It starts off slow with gathering and small monster stuff but you'll be slaying within a couple hours.

Weapon reach is more useful due to chip damage from steps.
FU is the best game to learn GS/Hammer due to the overall simplicity of monster patterns.

Freedom unite is a horrible place to start and all you'll attain from playing it will be a distaste for how shit a developer can make hitboxes

Yes. Just remember to sheathe often, its a weapon that deals big dick damage in one or two hits.
