Pokemon has been using the same combat for over 20 years now. And let's face it, even back then it was on the basic side.
How would you spice it up? Personally I'd like speed to determine how frequently you can attack rather than just who goes firs. That of course would require slower mons to be made more tanky.

Make team battles the default setting and get rid of 1 v1.
