Are Ansem (SoD) and Xemnas the very same ones that Sora has beaten? (like, brought back to life?)
Or Versions of them that were picked out before Sora defeated them (So they don't have a memory of being defeated)

It's not explained, but probably the latter. Once Xemnas was defeated Xehanort gets revived, no? And after that he time travels to recruit his other forms. Whether or not they retain their memory, who knows. I'm sure they were informed of what happened.
