I have never faced a challenge in Morrowind, only sometimes when I couldn't find an item I needed for a quest like the dwemer box. Other than that the game was easy as hell, especially after a while because you become a god and can kill everything

In Gothic 2 I got raped in the ass hard and I died millions of times, every encounter with even a rat can easily cause a death because the combat is extremely unforgiving and even as a high lvl character with a strong armor you can still get raped by a wolf if you're not careful

In Gothic 1 enemies too tough for you were literally immortal and you had to grind to be able to deal damage to them. In Gothic 2 every enemy is killable from the start which makes it much easier for people like myself who are good at the combat and can beat the tough opponents at the beginning.

Also removed invisibility frames, and backstep actually works properly in Gothic 2

Yes, getting raped by everything is part of Gothic. After a while you will get used to it and become good. If you git gud you can actually kill everything at lvl 0.

The Elder Scrolls series is basically the answer to "what if Gothic was good?"
The Witcher series took some inspiration from the Gothic games, as the devs were fans.

Other than that there's not a whole lot. This is somewhat of a stretch, but BotW is the only other recommendation I can give. Not because it's similar in gameplay or story or anything like that, but because it has an amazingly designed open world just like Gothic does.
