Do Gamecube games look better on a Wii U since it has HDMI?

It should. It's worth noting vWii has some latency of its own, higher than simply using a HDMI converter on Wii somehow.
Get a component cable and plug it up to a Wii, its basically the same thing except you can use the controller Gamecube games were made for.

You're right in saying basically because actually GameCube over component still looks better than Wii on component. That's a terrible shame. I imagine Wii U doing GameCube stuff probably looks even worse as it'll have some shit filter on it

If you have even a half decent PC you can just emulate them on Dolphin and they'll look a lot better rendered at a higher resolution.
