In the only example that comes to mind, hard is so bullshit that there is zero fun to be had in it. Which is Fire Emblem 12, where normal is so braindead easy you'd be retarded to ever lose a single unit, and hard is absolute bullshit where every enemy can easily kill your strongest dudes and the bosses are FE6 level absurdity.

Valkyrie Profile. On hard mode the game gives you more dungeons, loot and characters which makes the overall game easier, while on easy mode you get less of everything.

The trick in blackbox NFS is never upgrading your engine, max out everything else and get one of the cars with perfect handling, decent acceleration and good top speed; mazda rx7 or toyota celica for example.

In NFSU2 the legendary hachiroku is the best car in the game thanks to this.

I wish Pokemon had difficulty settings. Literally one set of games has had those to date and unlocking them is a bitch and a half. Otherwise the games fluctuate a bit in difficulty but most of the time you have to actively avoid gaining Exp or set up some other special rules for there to be any challenge.
