amusement park comparison mostly comes cause everything is usually close to each other in other open world games.
So far Xenoblade X and Zelda - one of the few to get some space going on, aside of some MMO games but those are ruined by other players.

The map is boring and empty. Witcher 3 and even Far Cry have more dense maps.
Honestly, a lot of it comes down to indoor hardware. The Wii U and Switch can't support the foliage that the other consoles can.

I think Joseph started too late with Zelda. Wind Waker or TP was probably his first. If those are your first introductions with the magical world of Zelda than OoT (and the 2D Zelda's) will look kinda bland in comparison. BotW is nothing like those two so I can understand where he's coming from but I don't agree with it.

There's a lot that could've been done better; more enemy variety, more weapon variety, more temples, different kind of interiors for the divine beasts, less blessing shrines, less combat (or more diverse combat) shrines. But there's also a lot that it does right. There are quite a few overworld quests that you have to stumble upon. Exploration is actually fun and not a chore as there aren't invisible walls (except for the map borders) and combat is fun. I actually like the weapon breaking mechanic.

A lot of things are nitpicky and not really a problem with the game but more of a wish that could've make the game ever better.

What i'd personally have liked was:
-a temple or 3 maybe half the size of the castle
-ruins that actually tell something about the world other than what they're named
-more enemy types
-a longer story

but that's about it.

There are examples of good stuff. Stuff that makes the game interesting. Like the Dragons flying around, for instance. The problem is that there isn't NEARLY enough of it for the size of the map. Also, the dragon's should have all been different boss fights that have a unqiue fight. Then after you beat them they become docile for you to get scales from infinitely, etc.

Other Zelda games have fetch quests, yes, but they also have dungeons, a story and music. BotW skimped on a lot and tried to make up for it with more fetch quests, but it failed to do so.

Not him but for starters, vegetation not moving when you run through it is probably deliberate in Horizon.
The bushes you walk through in BotW deform and move completely unnaturally, it would look very weird with Horizon's more realistic models and textures.
When you walk through grass in BotW, it looks like there's a bubble around the player that pushes it away. Horizon has the same effect but only for the tall grass, and it sometimes looks really weird.

Only because they clearly didn't want to waste PS4's already low resources on calculating basic physics.

Hell, even FF15 had vegetation reacting to the character's bodies. We've had full-body awareness together with environmental interaction, including vegetation, in PC games since mid-00s.

But Horizon does have grass that bends when you walk through. It's the tall grass you can hide in easily. I'm sure they could have gone with that for all vegetation but
1. it looks weird in more realistic games because flowers with multiple stalks bend in strange ways
2. Horizon has more vegetation with large leaves, which would completely deform if they settled for what's in BotW
3. Horizon has way, way, way more different plants, all of which would need to interact in individual ways

It would have been too much effort for what it's worth, because it would require a much better system than BotW.

In BotW the entire game was coded around the concept.

In Horizon, it wasn't. You can't just slap what BotW does into Horizon's world.

That's very much my opinion.
I firmly believe that BotW is an open world game to be open world and its features detrimental to it, while games like Horizon and Far Cry and Asscreed use it as a backdrop to combat. Horizon much more than the other two in that regard.
