There's your problem. Higher difficulties in Skyrim just means everyone is a bullet sponge and you'll never get through a fight with enough mana/stamina to spare.

Try not go for Whiterun first. It is completly okay if you just wander around, find cities and get quests from them and just explore. I had more fun that way than following main quest line.

Don't play on Legendary difficulty.
The only thing the difficulty setting does it give enemies more health and slightly more damage while making you deal less damage.

You sound boring. Go on the Nexus and look at skyrim top subscribed mods and see if any of them feel essential to you, then you can go to categories and narrow down by your tastes. I like to use a lot of mods from the immersive category for example. Go to lovers lab for porn mods
