Why do people prefer these? A regular controller requires less movement of your hands and fingers so you can technically save energy and press combos of buttons faster since they are all smaller and much closer together.

Also I'm sick of online FPS, what fighting game should I get? I have a PC and PS4, Guilty Gear aesthetically looks pretty good, Street Fighter has always looked ugly to me, BlazBlue looks okay, I don't know shit about fighting games but any game I sink time into I usually always become good at.

Just use whatever feels right for you.
And Guilty Gear is definitely a good choice for a beginner since it has one of the best tutorials in the genre and it teaches concepts that applies to all of them.
Also check out BB, Tekken and KOF if you're interested in something else.

I get Arin's point but thank god there's evo where both is allowed. Unless you're super serious and plan on traveling, stick is definitely best but locals or otherwise, preference is best

If want to play in arcades, you're gonna have to practice on stick no exceptions. Guilty gear has got a deep arcade culture, and if you live in places like Japan then they're an investment for practicing at home. You could just practice for the allotted time each credit of yen gets you, but that quickly adds up to what you'd have to pay for the stick anyway. It's like 2 bucks per 20 minutes of play. You need to practice a lot for shit like GG.
