The purpose of them is to get better gems for your weapons. The gems can increase your damage output significantly. You should alternate between doing story shit and CD shit so as to not make either of them too easy. Like you should do the first dungeon as soon as you beat the Blood Starved Beastor, or it will just be a boring cakewalk that you are way overleveled for.

Chalice Dungeons were a decent idea that was implemented pretty poorly. The difficulty should have scaled to BL, at least in the story CDs. The story CDs should be optional after the first time you clear them. There's no reason to have to go through that nonsense again on every character you'll ever make. They weren't random enough and the tilesets could have been more varied. They all end up feeling the same after awhile, which is the complete opposite of the actual game overworld.

Part of me wishes it would release on PC so modders could fix this stuff and make crazy CDs using assets from the overworld.

Nigger, all of these fights are easy as shit. The question wasn't "what's hard". The question was "what's boring" and all three of those are boring as shit.
Rom just sits there while you walk behind the spiders, basically being a less interesting version of Phalanx from DeS Celestial is literally nothing and can actually accidentally be killed before he even gets big, and the One Reborn is just a big slug made of bodies that slowly rotates. If your weapon is as long as a tricked saw or more and you keep walking left, he can NEVER hurt you. So just take out the casters when you walk in as the cutscene shows and the fight is over and now all that's left is a damage sponge.
