Zelda I consider cinematic because 1. it runs at 30 FPS, and 2. Despite it supposedly having more gameplay, the overworld is littered with cinematics and memories, and if you were to remove them, people would freak out, as if the gameplay wasn't enough to keep people interested, despite people praising said gameplay. Breath of the Wild can be even longer and the cutscenes are optional. Bayonetta 2 has superb gameplay between the cutscenes, so the cutscenes and QTE's don't matter, just as they didn't matter in Bayonetta.

Like the image says, gameplay time means nothing if the game is somehow completely dependent on the story, which all of those games are. It's like Dragon Age: Inquisition, which is 200 hours long, but it's casualized garbage designed for normies, so it's cinematic all the way through. All that gameplay doesn't help it in the end.

If it's overwhelming, just give it some time. They dump most of the mechanics on you early so replaying the early game isn't a bore. You'll get used to it around 20 or so hours in, and master it around 70 hours in or so. There's a lot of learning involved, but none of it is particularly gamebreaking, so just take your time and learn each mechanic individually.

X is a lot more confusing than Chronicles. While it has the better battle system, it expects you to already have gotten good. It's a brutal game, by RPG standards.

Why does that matter? Half the Switch's library isn't even exclusive. Zelda is on the PC, Mario Kart is on the wiiU, and everything else is just a glorified rehash, not unlike Bloodborne or Call of Duty or Halo, which you yourself said didn't count as exclusives for the Ps4 and Xbox.
