Undertale isn't an amazing game by any means. It just had an interesting gameplay style to normies who never played bullethell games, even though I wouldn't consider it a bullet hell. Combined with the autistic fan-base that shat out immense OC, and still do, with characters that, while not well developed, had enough personality that normies snatched onto them. Genocide route was a neat side thing that was more about forcing you to live with permanent consequences for "just seeing what would happen." It's not supposed to be a desirable path, and filling it with any more content would have run counter to the point of the game.

That's one shit excuse. It's bad because I do not give a fuck about the shit I'm killing, there's no emotional investment. On top of that killing shit that's trying to kill you is the norm. Out of all the ways to try to make the point of "what you're doing is cruel and wrong" grinding is not the way to do it. It makes the player annoyed at having to spam a button. The song change and text message are infinitely better at pushing that point across, the grind disrupts the flow of the game and makes the player care less and more impatient to get to the next point. It's bad design and retards defend.

You don't fight Sans and the game reverts to a standard neutral run afterward. If you fuck up on killing all of the monsters in each area, Mettaton will point it out to you.

There's honestly not much to it. There are a couple alternate cutscenes but only at a few points, and sparing muffet doesn't have anything. I think the only points of interest if you break it off suddenly are after the Papyrus fight, and sparing Monster Kid. Undyne the Undyin and NEO Mettaton both can't be spared.
There's one ending that can only be gotten if you do a genocide right up to killing Undyne the Undying and then stop before getting to Mettaton and/or cherry-tapping him (hitting him with a weak attack instead of getting him near the center still OHKOs him but it nullifies the route for some reason, which I'm sure has pissed off at least a few people playing blind) where Alphys becomes the new ruler of the underground, as well.

ConcernedApe is cool too. I know /v/ likes to shit on Stardew Valley and Undertale, but I think being humble and having reservations goes a long way into making a sucessful product. Many indie games nowadays try and make the scope of their game way beyond what it's capable of. Yooka-Laylee, MN9, Star Citizen, etc. Hollow Knight, Stardew Valley, Undertale, Shovel Knight, Furi, etc. all feel pretty grounded and have clear direction in what they want to be, and you can see this reflected in the devs.

There's probably only one example of each of those claims you could name. MAYBE two, if you have an example pull double duty.
That soundtrack has a lot of painstaking effort put into it. It was so important to him, that the first thing made for any fight, location, or scenario in the game was the song that went with it.

There are like 15 to 20 themes used multiple times throughout the game, that's part of what makes the OST good. It associates ideas with those themes and returns them sporadically to trigger your memory. It's a legit musical technique, and the extent that Undertale uses it goes light years past the point of being accidental.
Undertale is used the most often because that's the most important theme.

I'm pretty sure the idea for genocide came from "What if you killed all the monsters instead?", instead of "What if I had a route in which you are an asshole and it's hard?".
It's not necessarily something I'd put in a "good game design" canon. It's purposely designed to be actively unfun, and is only coincidentally difficult. The way you engage genocide is like breaking a game's anti-grind system. It really is just an uncomfortably long meta joke. Ironically the only blemish in the whole charade is having an actually well-designed fight in the whole thing.

Stardew Valley is only SJW in the sense you can marry whoever you want regardless of gender. It doesn't really try to say anything beyond that and it's obvious why it would be beneficial from a gameplay perspective even if it's shallow and doesn't really mesh with their personalities.
