Rewind has been in racing games for years. You don't use it in matches with other players. It's a nice feature that eliminates the tedium of doing whole course over and over again however I can see where some people think it's too easy.
As for other games? Why not? As long as the base game is challenging it doesn't matter what easy mode features they add because it's easy mode.

I legit prefer the rewind system from the console port to quicksave quickload spam
