Personally I think the different skin tones are just about the only trait they took from their fathers. As for the nose and lips that's just the Gerudo ageing process all the old Gerudo have similar features.

Nabooru was brainwashed by the Twinrova sisters and transofrmed in a Darknut, Ganondorf was already in power. He didn't summon any monster he did everything by himself with the Gerudo Army he trained.
Later he made a pact with Volvagia and Bongo Bongo to control DeathM and the DeathRealm but that happened only after the got the Triforce of Power
