Dark Souls does it pretty well IMO.

HP, depending on the weapon that inflicted it

My only misgiving is that it also has lighting which is generally just a stronger fire, I wish they'd differentiate the two. Something like adding a stun to lightning at the cost of damage or just adding some DoT/debuff to fire.

I don't think elemental or even physical immunity is inherently bad in games. I just think that more often than not these aren't handled well in your typical RPG. They're mostly holdovers from the ages of DnD when you would rarely have any less than three party members at a time, not including any hirelings. The problem is that most games now work with being entirely played solo, meaning that in a lot of them you're hooped if you're playing an X focused caster or pure brute without contingency plans.
