If you care about the story, play 1->2->3

Gameplay is easier in 3, but most similar to 1. 2 has a few changes that switch up how you can go about things.

Some people have a perception that Souls fanbase thinks their games are hard and sperg out over that.
Other people scoff on the so-called lorefags.
Other people get mad because "git gud", certain level of tryharding or "elitism" that annoys casual players.

In the end they're just typical people who like to play those specific games, usually it's just the people calling the fanbase cancer that have issues.
