the only thing they changed is adding a basic premade combo for newcomers and changed some characters dp input. As for the 3v3 being changed to 2v2 + stones, so far everyone who actually tried the new version says its better.

Injustice 2 characters looked bad early in development but looked good and pretty much final in the last 3/4 months before release. MvCI comes out in three months so unless they're just showing off a really fucking old build it's not gonna get much better by the time it's out. The game is just completely visually unappealing in every sense, that's not something you can just fix in a few months.
