Bowser deserves to be happy

Mario kills Bowser and marries Peach like Luigi's Mansion shows. Mario Odyssey is the conclusion of Bowser's story. Bowser Jr becomes the new Bowser from that point on leading to the original series while Bowser makes a pact with King Boo and is hereafter a sort of Gruntilda figure trying to come back to life.

I'm pretty sure Mario was supposed to get married with Peach at the start of the game, then Bowser came to do the same and kidnapped her like usual.

So Mario isn't just saving her for the sake of it, he must literally save his future wife. There were some hints about this in the Treehouse videos:

One of the rabbit bosses asks Mario "Are you looking for the Wedding Ring? Lord Bowser has it now!"
One of the amiibos of the game is Mario wearing groom clothes. The devs said that those amiibos are related to the story and Mario's pose, much different from Bowser's because it's sweeter and less demanding, is actually relevant

So, the ending of the game is gonna show Mario finally marrying Peach.
