Because that's what most people expect from their AAA games. Btw sony makes a bunch of games. Stuff like Soul Sacrifice Delta, Gravity Rush, The Last Guardian, Oreshika, Bloodborne just to name a few. But you probably never heard of some of those and that's where the problem lies. They are niche, that's why they don't market them as well as the big AAA games that sell a couple of millions.
Because they are what video games ought to be.

Because it allows developers to show off the hardware. The further and more detailed a horizon you can render in real time, the more interested normies will be. And a game with simple controls that make it look like you are doing cool and cinematic things, even if their QTE's can be very satisfying to normies and casual players.

And that's precisely what's killing gaming. They're focusing on the wrong area of a game and neglecting the other.
They could be creating gameplay that's both interesting and new but their first priority is pre rendered cutscenes, realism and marketing.
