Can you do anything about the SSD size? 60gb is not a lot for your OS drive. It'd be an ok game drive though if you want to have the 2TB as your OS drive.
Look for 2x8gb ram, so you can get that dual-channel speed.
Make sure you have a copy of windows factored in too. If you know any college kids they can get you a cheap copy.
Like I said though, you're good to go either way.

60gb is just super cramped for the OS which is my only concern for your build. Just keep an eye out for deals. Looking for used ones might be worth it too. No shame in getting a used part if it improves the quality as much as an SSD would.

Your current CPU would probably bottleneck the 1060 badly. I have a newer and better i5 combined with a 970 in this computer, and that's bad already in CPU-intensive games. But then, to get a more up-to-date CPU you might need to get a new motherboard, and if you have your eye on CPUs that go into a 1151 socket you'll probably need to replace your RAM as well.
Also, get an SSD. That will really smoothen your experience. Booting in a matter of seconds, and loading screens mostly eliminated. Keep your old hard drive for documents/music/movies/whatever, and use your SSD for vidya. 500GB or 1TB if you can afford it should be enough for now.

You will need a new Mobo if you want to upgrade to Ryzen.
Your mobo has an AM3 socket which is compatible with all 8000 series AMD CPUs.
9000 series run hot and faster but overall are not worth the extra money.
Ryzen uses the AM4 socket which is unique to the Ryzen CPU series.
Make no mistake Upgrading your CPU to Ryzen will help massively with gaming to a certain extent. Anything running Unreal Engine will still chug frames because it's just not optimized for AMD's computing systems.
The AM4 socketed motherboards will also require DDR4 memory in dual channel and your DDR3 memory is going to cause issues.
