You can start with 2.

I've started with 2, then played Deadly Shadows.

Storywise, you'll get what's going on because 2 takes its time to start with the plot but it will clue you in what happened in the previous game when it's reached that point.

Deadly Shadows, while not as good, is still very much a Thief game when it comes to the level design of the mission objectives, and it concludes the trilogy with one of its best areas.

I still plan on finishing 1, but for me it failed to hook me in. With 2, I was engaged the moment I stepped through the door of a mansion in the first mission. The game is unbelievably good in conveying the feeling of you being a competent thief and a stalker in the shadows who can knock guards unconscious left and right, but otherwise are worth dick when you're caught and forced into combat. Don't get caught.

Thief Gold has it's moment, but it's also has a lot of really dumb fantasy shit that ruins the sneaking fun. Neither is really "dated" though, once you get past the graphics you'll find one of the most kinesthetically satisfying games ever made. What really separates Thief from other stealth games, is that you play as a weak little bitch. You don't have epic CQC moves, epic takedowns, night vision, or reflex mode, or gun arsenal. You're weak and kinda slow (unless you remember the basics of Q3 and strafejump) and archer fuckers never miss. This is what makes it so satisfying to make it through the level.
