How well can the i3 6100 emulate up to Wii games 1080p?

probably ok up to gba, psp/ds will definitely strain it if you're upscaling to 1080p
if you're just stretching 360p up then it will all be fine

Really well is my guess. From what I remember Dolphin uses two cores with a system hack to use three by default.

It'd be perfectly adequate for Dolphin, assuming you're pairing it with a half-decent graphics card and not using the iGPU. An entry level card like a GTX 1050 will be just fine for any emulator at native 1080p. Even Cemu will be fine for the most part, though you'll struggle a bit with more demanding titles.
