Why are casual filters always the best boss fights?

because you get to brag about it like an insufferable asshole after beating it

You have to actually use your brain to find a solution.

Mot is a mid-late game boss though, that's not what a casual filter is.

It lets you actually have fun with the skills you've been forced to learn throughout the game. In certain games, it also means it's time to use those rare weapons/power ups/items you've been saving for just an occasion.
