I guess, personally, It's more relatable? I mean I understand meeting like some new person more than raising my own kid. Granted I'm 20, but maybe due to the fan base of God of War the developers may be pandering to them in the sense that fans probably have kids now. Just a guess

Because from the player's perspective, not the character's, that's what you're always doing. It makes more sense to introduce a player to a new relationship than to expect them to be invested in the middle of an existing one.

Because with a surrogate child, the game can go through the process of making you care about them/learn about them without it feeling forced. Not everyone has kids, so not everyone will easily empathize with a well established relationship before you even grab the reins.

Video game writers tend to take the more robust option over other story hooks. It's much easier to create a blank slate everyman if he simply finds a kid, rather than having one from the start. Right from the start you have much less backstory to create, which means less screentime needed to develop something that doesn't matter. Of course, just because writers tend to take the easier options doesn't mean they're bad. Games are an inherently open-ended experience when it comes down to it. It usually fits the medium when you can show as much as possible on screen rather than tell you.
