Guts also has better equipment. Geralt usually only has 2 swords and maybe a bow and arrow most of times.

Guts has the Berserk armor, the dragonslayer, the mechanical arm that can turn into a cannon and a automatic crossbow, plus pocket knives, small trinkets, etc.

Guts wins easy regardless of "prep time." Serpico did a much similar thing against Guts by fighting him alongshid a mountain edge, R1 spamming his rapier and preevnting guts from defending himself or drawing his sword.
Yet Guts skillfully dodged every attack and even caught the blade, bare fisted. Lets also not forget his natural reaction time and incredible durability.
