From a technical standpoint, you'll need Tutu or BGTrilogy to start, which runs the entire series on the BG2 engine, which looks and runs much better on modern PCs. Widescreen mod also for the larger resolutions.

For content, there's a ton of stuff to choose from. A good choice for a first playthrough would be Unfinished Business, which adds in content that was originally cut. There are versions for both games. NPC Project, BG2 Tweaks (which will also work for BG1 with the Trilogy or Tutu mods), and the new Imoen Romance mod are also good choices.

Play as a fighter first.

The one absolutely essential mod you need is high res font replacement. It's a lot of reading and the default font comes from 800x600 times.

Seconding what >>379861641 said. Played vanilla for the first time 2 years ago, and it was perfectly fine. Porting the game to the BG2 engine changes too much mechanically. If you are combining it with a mod like SCS then it's fine, since that mod accounts for the differences in balance and encounter design. But if you don't use such a mod, then just stick with vanilla.
