I don't know about parts because I am not american, so can't help you there as I don't know what is available in your market.
The only advantage of custom fans is the reduced noise at high cpu/gpu usage. They are pretty much just if you max your cpu constantly and are very sensitive to the sound of your fans maxed.

the GPU stock cooler and CPU stock cooler are typically fine, but make sure your CPU comes with one. The intel K series doesn't come with one.

multi GPUs are for higher resolutions like 4k.

I went for SLI because it was the cheapest way to get an upgrade. But as already mentioned, only a few games support it and in most cases it is just a pain in the ass to deal with: Temps, Microstutter, Frametimes, etc.
2/10 wouldn't recommend, just sell your old GPU and get a new one.

Upgraded to an i7 7700 and rx 580 after having stuck with an i5 2400 and a 6950 for 6 years.
Got a freesync 1080p 144hz monitor.

Games run smooth as babby asses. Really can't imagine needing anything much better in the near future. You'd have to have autism or a fuckload of cash to want to go 4k with a ti let alone SLI.

SLI/Crossfire is a meme thought up and pushed to squeeze dumb goys for extra shekels.
The supposed boost you get, provided you can find games (that you'd actually want to play) that actually support it properly, is just not worth it for the cost, increased power consumption and cooling concerns.
