The only times I ruined someone's buildings were when I needed resources they had. I took what I needed, nothing more. One guy had a wal made of lapis lazuri. I tore it down because I needed blue dye to dye wool for my pixel art.
I didn't floor place with lava or fill it with tnt, that's childish.
I admit though, one time I snuck into one guy's mine and placed a trap there. A piston, hidden in wall, rigged to pressure plate. The fella was a dick, was sporting diamond tools, shittalking and raiding people with lava and tnt for "lol u mad xd".
The piston pushed him into a 1 block wide shaft leading into a puddle of lava.
He lost his diamond armor, pick, sword, lots of other things and his dignity.
