I think they can do bluetooth audio with just an update, but they probably would have to limit the number of controllers connected as they do with local wireless multiplayer. For example, Mario Kart can do 4 players on one Switch but only 2 players per Switch with local wireless multiplayer.

It's the sacrifice of making the Switch that flexible in terms of play style. You can't have things hooked up to the Switch as it'll limit the easy transition between docked ->undocked ->table top mode. I suppose they could have a mic jacked into one of the Joycons and the Pro controller. But the price is high enough.

So I remember when I got a 360 and got a microphone with headset for it

you just plugged it into the controller and it worked

you don't need to put the mic in the Switch at all you just need to put some sort of input jack and then sell the headset with mic separately

there was no need for the middleman of the squid connector thing here except that they didn't put the SOFTWARE to do any of this into the console so you gotta do it through a phone
