Do Bitterblack Isle after beating the main storyline (i.e, killing the dragon). That should put you at a level where Bitterblack Island is still a decent enough challenge.
PS: The bitterblack island challenge is to go the island as soon as it is avaiable, i.e, after you get your pawn. You can not go anywhere else other than the island or to buy items. No grinding on any place other than the Island allowed.
You are also only allowed to use your main pawn. That means you will be something like level 10, with initial equips and only your main pawn.

If you delete your save before loading it, then start a new character, the first time you're able to have your pawn return with rewards they'll come back with all the rewards your previous pawn earned since you last played, as well as all of their bestiary knowledge.

I honestly didn't like the ddo vibe/game atmosphere, they anime'd the game up and that by a large bit, I know people are just thirsty for more, me too but this game didn't really do it for me

whereas the original dragons dogma feels more like a classic take on the rpg genre

Ranger or Assassin are good.
What's important is that your stat growths are determined by what class you are when you level up.
Strider is also good to stay as but you won't get as much physical attack growth as the other two. Assassin also doesn't gain much magic attack if you want to switch to a magic based class later.
Magic archer is a ton of fun if you built your character to have good magic attack, but the classes own growth rates are shit unless you mod it. If you stick to Strider/Ranger you should have enough magic attack to have fun with it later though.
Don't listen to people who tell you that a 100-200 difference in attack doesn't matter because the late game weapons give you a ton of it, damage calculation in this game is something like damage = attack strength - enemy defense so every point counts against high defense enemies. If you don't have a good amount of magic attack as a magic archer you're just going to be hitting a lot of 1s and have no fun, I know from experience.

Technically it happens sometime during Stage 4, there would be a Cockatrice corpse present in the farm, then you would be asked to run around then back, then it will be resurrected. The quest had potential to be a Griffin tier quest but immersion is easily broken when you realize you can just teleport back.
