I recommend Matt Barton's channel. Not exactly documentaries, but provides a lot of insight into the developers' minds. However, seeing other replies here, I feel this suggestion is way off the direction /v/ has been heading for a while now, which is sad.

i used to watch it all the time, even when reruns would play. learned a lot of "useless" video game knowledge from just watching it.
