The HD version on Wii U is the best version. I can't think of anything that the other two have over it.
If you have the official GC adapter, you can even play it with a GC controller through a homebrew app called HID to Vpad

HD version is the best. It tightens up some niggles of the original version's gameplay and using the Wii U pad to access the inventory and viewing maps without pausing is brilliant. The HD version also vastly improves the colour palette so it's not as drab looking and also includes mirrored hard mode. It's the definitive version by a mile.

Another question. Can you play Twilight Princess HD with a classic controller pro? My Wii U pro controller broke a while ago and I haven't replaced it. I can play just fine with the Wii U gamepad but I just prefer a regular controller
