By far the game I replayed the most was Spider-man. The 2000 one with first gen 3d, I played through it countless times, on all possible difficulties, in all possible costumes, with and without what-if mode. I remember one day when just I sat down and ran through it three times in a row.

GZ acted as the prologue for TPP.
To this day, some people still prefer GZ to TPP. They aren't wrong, Camp Omega is possibly the best level from GZ/TPP. The only problem that it's a literal demo, it's only 15 minutes long.
If you can get it for free (or in your case, bundled in one package), I say get it. I don't think you need to play it other than for getting some context and experiencing Camp Omega. I still disappointed that you can't go to CO in TPP.

The story doesn't really matter if you haven't played every other MGS game first anyway.
GZ is better in some respects. It's a much smaller game, but the level design is very consistent and great. High replay value. The Phantom Pain suffers from the big open world = empty open world problems.
