From there I'd recommend Untold 2 and IV, and to definitely check out III at some point (but out of all four of those titles it probably has the most brutal intro, so its tough for me to recommend as a first game even though its my favorite).

Release order if you can stomach things like no sidestep/no autobattle/slow animations and a wizardry 4 tier of bullshit sixth stratum, also EO2 FOEs do not give exp and so you'll eventually be underlevelled, colossus/juggernaut fight is a level 60+ fight and you reach him at around lv48.

EO3 is the best etrian all around and a great starting point.

EO4 is the "easiest" EO and has an amazing free demo that literally has the first 5 hours of the game.

EOU is EO1 but rebalanced, classic is arguably one of the hardest things in the entire series.

EOU2 is EO2 but without the shitty design decision, the best UI and overall best balance and variety, contends with EO3 the title of best EO.

Avoid Etrian mistery dungeon, they had no fucking clue on what they were doing.
