I didn't play the 360 version, only the n64. But from what I heard, it's just like you said : the main issue was the multiplayer modes.

It was lots of fun on n64 but people didn't find them as enjoyable on 360 for whatever reason.

beehive run is easier
shoving mooks in random spots they never used to be served no purpose and was dumb
cheese delivery much easier because of huge gaps to sidestep the jumping boxes
facial animations far less fleshed out almost like there are less bones in the animation rig
Great Mighty Poo fight is easier
Giant saw blades are easier but I would probably consider this one a good thing
Swimming in general is easier BUT they get rid of the only actual swimming challenge with the electric eel
Too lazy to program in dual wielding Uzis just recycle the multi-player animations (okay for the War level but plain stupid in the Matrix level)
Bazooka Teddiez nerfed from hardcore aimbots to babby mode
Even more censorship on the 'mature platform for mature gamers'

Don't get me wrong I enjoyed L&R especially played the multiplayer online quite a bit but it is a bad remake that fucks around with things it shouldn't have.
The tail is fluffy as heck though.

The only things L&R did right were the visuals and making Fangy not control like complete shit.
