Because I like to actually fight enemies and not one hit kill them. I have several characters, one is 190~ and its just boring when you kill enemies with such indifference its barely a fight. I never really cared for chalice dungeons outside of that character, the gems arent necassary and only serve to make the game even easier, its more for pvp, but the pvp scene is dead so who cares.

There's a huge flaw in your logic.
Anyhow, putting points into stats beyond 40 has pretty much no effect. So leveling up past 90-120 just makes you more versatile, not stronger.

Anon, I said Ive just made the character, I havent even reached Byrgenwerth yet with it, I ran the DLC immediately and have only met the requirements of the weapon and stopped leveling. I wanted to try the weapon at its normal performance, rather than on a character that was so high with lots of gems that any weapon used at that point would perform well.
