Everything in Souls games is trivial if you invest just enough dex to equip a long bow right at the start

Maybe it's because I don't pvp, but whenever I play I just invest in stats that will let me equip stuff as I go. Start as a Knight and see I need 2 more faith to use Heal? I'll get that. One more dex for the longbow? I'll take that too etc. I always find this makes the games super simple

You can block their attacks but you can't "block them till they stop spinning." They will not stop spinning as long as they are hitting you or your shield. They only stop spinning if they are past you.

They grinded my gears at first but now I just treat them with respect. Having more experience with the campaign side of Rome 2 helps, but my first few legendary campaigns these guys were basically lawnmowers.
