For manipulating models I used Milkshapes3d.
For editing textures I used gimp with an extension for editing .dds files.
For unpacking files so I can gain access to textures and models, I used the converter kit which can be found on the residentevilmodding website. You'll find it in a thread by a user called Son of Persia, and if you just read the thread you'll get some tips on how to use it.
