This is incorrect. The ships do not hold themselves in one piece because of structural strength and design, they obviously would flop over at the slightest turn. The ship is held together with structural integrity fields which are forcefields interlocking all the atoms in the ship together.

Voyager is atmosphere capable because it's tiny. The Defiant and other ships likewise.
