It's simply a question of having enough RAM, or being able to calculate a large area with a lot of AI, physics and players in it at the same time (even if everyone had a polygon count of 10, the processing power of those things is more CPU related)

Seeing that every Switch game must be able to run on portable mode, and that portable mode is only slightly below WiiU in terms of power, It's a safe assumption to say that those games wouldn't run on a Switch.

But the proof is in the pudding. Almost no big 3rd party games of 2017 are going to the Switch. Doesn't matter how much you speculate and wish for stuff to happen. It's just not happening.

It's a common strategy for companies to sell at loss in order to build a consumer base, then when production costs fall in the future they can recoup with an already established and growing loyalty base.
