Because some fighting games have decent plotlines for some characters, not to mention that some fighting games (I.e Soulcalibur) were literally built around their SP content.

Can't remember which one it was but there a mortal kombat where you ran around a map doing quests like a light rpg and you started off as a young man but by the end you were old, I was really impressed at the time by it, there was also the other mortal combat with co op but not sure if that counts.

There's no reason why they can't expand upon the lore.

I'm annoyed at all the fighting games with genuinely good lore that flush it all down the toilet to cater to tourneyfags.

2 player mode was always just for a bit of fun when you had friends over, it wasn't the be-all-end-all of the game.

Mario actually is remembered for the story and charcterization. Minecraft isn't remembered at all its just a kid game and Tetris is exempt because it came during the bronze age of video games
