Because otherwise how are you going to hear the game and the chat at the same time? If you go headphoneless you need to either prop the phone up close to you to speak into it or hold it against your face with your shoulder while you play. If you play with headphones you'd only get chat and not game audio.

It's the "official" option through Nintendo since voice chat was killed before Splatoon on WiiU and that pissed people off. Just use another chat service on a computer after adding the people you want to play with. Or just don't use chat since you know everyone is going to just chimp out when they lose.
