Hard to say, there's a lot of cool boss battles I'm sure I've forgotten. I replayed 3 a few months back and the fight against Hades is still awesome, as well as the titan fight where Kratos is practically a flea jumping around on him. Beating Zeus's ass is never not satisfying.
I am mildly hype for the new game but I'm very glad they're moving on past the Greek mythos, especially considering the world is in ruin at the end of 3.
