Modern programming is about functions and procedures.
The idea is that you can write them once and then use them over and over again to do something trivial instead on rewriting the whole code.
As if :you need to solve certain equation, insteand of writing several lines of code you write 1 single line that does it for you.
There are libraries of these for pretty much anything and what you have to do nowadays is to use them to create something bigger. (software app)

problem is, 3/4 of this code should be placed in different objects, as methods that get triggered by other methods from other objects in certain conditions or whatever. you don't slap unlimited if works in single "hero" object to handle everything that happens in entire game, that's also why his code looks like countless copy-pastes with one variable changed.
even if he'd cut his huge ass chunk of protag script into smaller protag scripts, it would still be wrong logically because shitload of things in this code refers to other objects directly and should be handled by those objects

i have no idea about framerate or anything, i just took a quick peek at the code without really getting too deep into it.
what i would do is triggering interactions by built-in unity thingies and staying in them. Good vidya scripts don't need this tick-tock updates or frame updates at all, running simply on objects running various functions between one another through some kind of interaction system.
So:

That being said, i'm just an okay programmer, not some kind of unity guru, and i haven't read this entire code, just took a quick peek and made a lot of assumptions about the rest of it. I don't think i've said anything wrong though, those are basics of the basics, standard logic, mindset for this kind of projects
also: even array with loads of interactable objects and loop that runs update script from every object in array sounds infinitely better than just hard-coding all of this shit in one huge function.

literally anything is a good point to start. C# is pretty much java so you'll learn objective ways, which is good since that's the most important thing to learn if you want to make smartphone apps or vidya.
of course c# limits you to windows applications, but you won't have a problem with switching to different language when you'll grasp it. You won't learn low-level things like pointers, but it's not some kind of absolute requirement to start programming. Go for it.
